CITES

In 1998, the sturgeon came under the protection of the Convention on the International Trade in Endangered Species of Wild Flora and Fauna (CITES). Since then, all the caviar traded in the world has been farmed and has different origins. Today the quality of caviar depends on the quality of its farm, water source, environment, recycling method, nutrition, respecting the maturation age of different species, processing phases, the recipe, and packing. Each of these steps must be fully handled by the masters and farmers of this business. 

Nos Caviars

Beluga

  • The king of caviar comes from the huso huso sturgeon. Originally from Iran, this caviar is distinguished by the generous size of its grains and its gray nuances. Delicate flavours, slightly buttery with an incredibly long taste on the palate.

  • Taste: Creamy- Marine notes
    Texture: Medium firm
    Colour: Dark grey to light grey
    Roe Size: 2.9-3.4

Huso Dauricus

  • Prestigious caviar coming from Huso Dauricus sturgeon from Amur River. Firm eggs with an explosive nutty taste low in iode with a spectacular grain size.

  • Taste: Creamy/ Buttery
    Texture: Firm
    Colour: Light green goldish
    Roe size: 2.9mm-3.2mm

Imperial Gold

  • This farm-raised caviar is a hybrid (Huso Dauricus and Acipenser Schrenki).

  • Taste: Buttery/nutty
    Texture: Firm
    Colour: Dark to light green
    Roe size: 2.8mm-3mm

Oscietre

  • For this caviar, TAK works with various farms, from Amur, Poland, Italy and France. A famous species (Gueldenstaedtii) while we talk about caviar. A robust taste originally from the Caspian Sea.

  • Taste: Reveal delicate marine notes

Baeri 

  • Baeri is from the Acipenser Baeri sturgeon raised on different farms worldwide. TAK’s origin selections are: Poland, Bulgaria, Amur, and France.

  • Taste: Long-lasting and woody flavours
    Texture: Soft
    Colour: Dark brown-grey
    Roe size: 2.5mm-2.8mm
