In 1998, the sturgeon came under the protection of the Convention on the International Trade in Endangered Species of Wild Flora and Fauna (CITES). Since then, all the caviar traded in the world has been farmed and has different origins. Today the quality of caviar depends on the quality of its farm, water source, environment, recycling method, nutrition, respecting the maturation age of different species, processing phases, the recipe, and packing. Each of these steps must be fully handled by the masters and farmers of this business.
